Our first share came on Tuesday of this past week and while it is amazingly large, I already have found use for most of it in our holiday celebration meals.
The Omnivore Share:
- 1/2 chicken
- 1 jar of pickled beets
- 1 dozen eggs
- 2.5 pds. of carrots
- .33 pds of garlic
- 1.5 pds. onions
- 2.25 pds. of potatoes
- .75 pds of greens
- 1 head of green cabbage
- 1 winter squash
Veg. Share
-.75 pds. of radishes
- 1 jar of tomato sauce
- 1 dozen eggs
- 3 pds. of carrots
- .5 pds of garlic
- 1.5 pds. onions
- 3 pds. of potatoes
- 1 pds of greens
- 1 head of green cabbage
- 1 winter squash
There are any number of wonderful soups you can make with your veggies. One of my favorites is a carrot soup with curry and onion. Simply boil the carrots in broth (any or water) until soft, while heating onion, oil and curry powder (to taste) over medium heat in a saute pan for 2 to 3 minutes. Once the carrots are soft, add the onion/curry mixture to the carrots and liquid, puree in your blender and serve warm. I picked up some naan from Trader Joe's last week and this made a complete and comforting meal. Bonus, it was cheap AND easy!
