Lewis Waite Farm News and Order Deadline!

We hope you are all savoring spring – the cooler weather is back again and we hope it makes the spring flowers last longer!.

We described in the last newsletter some changes to the cheese offerings at West River Creamery. We forgot to say we had changed all of the items to bill all the cheese by the pound. We have been noticing such differences in the sizes and shapes of the pre-cut 1 lb and ½ lb pieces and so decided to handle the billing differently. Jane and Charles are also offering two new cheeses - Cambridge Classic Reserve and Londonderry Classic Reserve, both of which have been aged for more than 1 year. The younger Londonderry is still available but the younger Cambridge is still aging and the big wheels are not yet ready to cut. So try the new flavors and see how you like them.

We are happy to announce we will be offering more Beef from another farm, Manx Station Farm in Cambridge NY. This farm is about 2 miles from us and has a small herd of Belted Galloway cattle, some black with a wide white “belt” around their stomach and some are soft brown with the big white belt. Glen and Vicki Rowse have offered their ground beef before – a long while ago when we ran out once! They also raise goats and offer their chevon on our website too. Glen rotationally grazes his herd and until last fall would grain finish the animals. He has decided this winter to completely grass-feed the cattle and has stopped buying grains for the herd. He has an offering of ground beef, roasts, steaks and kebabs. He uses the same butcher as Mack Brook Farm and O’Donnell Hill Farm so the cuts will be similar to theirs. Give it a try and taste test them all to see if you can tell the differences between the breeds.

Thanks to all of you who ordered from us throughout the winter. We appreciate your support and are very glad that you enjoy our products. We hope as the recession drags on that we can all still eat well, even if eating a little less, and we’ll all be healthier and happier for it!
