Veggie top-ten list

The New York Times ran an article in their health section on Tuesday about how hard it is to get Americans to eat their vegetables and solicited suggestions from readers about how to encourage greater vegetable consumption. My answer: join a CSA! If you have so many gorgeous vegetables filling the fridge, it's hard not to devour them.

What really caught my eye in this article was the reference to the Center for Science in the Public Interest's ranking of vegetables based on their nutritional value. The top ten, according to the Times:

  1. Kale
  2. Spinach
  3. Collard greens
  4. Turnip greens
  5. Swiss chard
  6. Canned pumpkin (!)
  7. Mustard greens
  8. Sweet potato
  9. Broccoli
  10. Carrots

I guess we'd better eat our leafy greens. And, um, the pumpkin pie...?

I couldn't find a web page for the full CSPI list, but there's a nice PDF that gives a Consumer-Reports-style breakdown of the nutrition. I think I'll print it out and post it on the fridge for inspiration!

Canned Pumpkin

I've been making this Pumpkin muffin recipe for years and my family loves it! Perfect use of one 15 oz can of pumpkin. Cheapest canned pumpkin on the market? Cheaper than Libby's at Key foods? 365 brand canned pumpkin at Whole Foods is 99 cents.
