So, all those plums. You could carry three (or six) to work every day, or you could try a new breakfast dish.
Breakfast Plum Bake
Ingredients:
3 lbs plums, washed, pitted and quartered
2 tsp vanilla
1/3 c maple syrup(optional)
1½ c oats
1 tsp salt
1 tsp cinnamon
½ c unsalted butter divided, cut into small pieces
Directions:
Preheat oven to 400 degrees.
In a large bowl, combine peaches, vanilla and ⅓ cup maple syrup, if using. Set aside.
In a separate medium bowl, combine oats, salt and cinnamon. Cut in ¼ cup of butter, using your fingers, until the mixture resembles coarse breadcrumbs. Large pieces may stick together, and that is fine.
Add plums to the oats and mix to combine well. Taste the mixture and add additional maple syrup if desired.
Pour into a 9x9 baking dish and dot the top with the remaining ¼ cup of butter.
Cover with aluminum foil and bake for 45-60 minutes, until the plums are soft and the oats have browned.
